shred 1 whole rotisserie chickenor 3 large breasts cooked and chopped

1 large or 2 small cans cream of chicken souplow sodium or see notes for subs

3 stalks diced celery

3 large or 12 baby diced carrots

1 large diced red onions

2 bags of instant brown riceor any rice or cauliflower rice

1 large carton low sodium chicken brothor more if ommitting cream

2 T minced garlic
-
1 T pepper
-
2 t turmericadding pepper to turmeric aids benefit absorption

1 T, heaping poultry seasoning
-
1 t (optional) cayenne

1/2 cup chopped, packed parsleyadd some sprigs for garnish

Juice of 2 lemon

Hold the phone! This chicken soup is the antidote to a number of pressing problems. But Kym, what kind of pressing issues could possibly result in needing some magical soup?? Oh dear friend, let me count the ways:
- You or someone close by is under the weather
- Its a wee bit chilly outside
- You soul needs a bit of warming
- You are SOUP OBSESSED like your favorite blogger (that’s me…right??) =P
- My fave – you need an EASY IP recipe for easy nights where the last thing you need to worry about is WHAT TO COOK!
I got you. But Kym – what about options for different lifestyles? Got you there for the most part. As follows –
- Easiest Way to Go Possible
- Buy a rotisserie chicken and pull that bad boy apart (no need to cook the chicken first).
- Use Instant Rice (Boil-n-Bag)
- Buy bags of diced mirepoix (diced carrots, onion, and celery) or dice yo’self
- you haven’t been making your own broth??? What the heck? Just kidding – buy that ish! Look for low sodium.
- Whole30 | Paleo
- Cauliflower Rice instead of rice (follow this recipe). Love love love this recipe and you can make it ahead of time and store it in the fridge.
- If using a rotisserie chicken, check ingredients. MOST have non-compliant sugars and soys (BS!)
- Follow my IP recipe for making your own “faux”-tisserie chicken. Hell, do it the night before. The IP does all the work while you are doing whatever else you need to do.
- USE Coconut or Almond Milk in lieu of Cream of Chicken Low Sodium Soup (1:1 ratio)
- ADD 2T of Tapioca Flour (Starch) to thicken broth during last 30 minutes of cooking. Is it absolutely necessary? Absolutely NO!
- No cream-y content – DELETE this component all together and add more broth. No biggie at all. Some folks want more of a broth-y soup and some like a creamier base. Up to your tastebuds and those of your “customers”.
No Time for the Slow Cooker function on your IP – NO PROBLEMO YO!
Simply follow all the steps and instead of turning the saute mode off, keep it on (Saute High). Cover and continue to cook (stirring occasionally) until soup comes to a low boil. Cook for 10 more minutes. Reduce Saute High to Saute Low and serve when you are ready. NOTE: I do not recommend the pressure cooker method because your meat and rice are already cooked. Your rice and veggies will basically disintegrate into a mushy mess and nobody wants that mess. =)
DO NOT FORGET THE LEMON PLEASE – Add lemon to every soup recipe to add brightness and a healthy
component. The combination of turmeric and lemon in this soup provide a power-packed punch of anti-inflammatory, immune system recovery benefits.
I dont want to over complicate this recipe – i just want to give you options. If you have questions, please ask. I would rather we work together to make this easy recipe come together to make your life easier or your little one feel better while they have an evil cold or something, that is WHAT I AM HERE FOR.
