Directions
Sweet potato mash is without question the perfect indulgent side for those that wish to have a bit less starchy option and you just cannot beat the color it adds to the table.
Instant pot the potatoes, then beat with ghee, garlic, pumpkin spice, and unsweetened coconut cream. Sprinkle with paprika and serve.
This can be made a few days ahead if need be. Reheat in oven or microwave with damp paper towel over top.

In your instant pot, add 1 cup of water. Place the trivet the pot came with in the bottom. Place washed potatoes on trivet and lock the lid. Hit manual and adjust time to 15 minutes. |

Once time is done, allow a natural release for 5 minutes. Then, manually release the remainder of the pressure. Using tongs, remove taters. Remove skin and put the potatoes in a mixing bowl large enough to use your mixer. Add all other ingredients and beat until pretty smooth. Add paprika and serve. Or heat in microwave for dinner is almost on the table. Enjoy! |
