1 pork shoulder get as big as you can depending on the crowd you are feeding
4 cups orange juice
1 can dr. pepper
3 bay leaves
2 T minced garlic
1 t himalayan sea salt
1 T lemon pepper
1 large orange naval preferred
1 sliced onion red, white, or sweet like vadalia
1 T cumin

Instant Pot: Pork Shoulder & Marinade from 3 Nights of Globally Inspired Cuisine

This is the first in a four-part series for taking a huge cheap pork shoulder and creating 3 nights of globally inspired delicious cuisine. Fasten your seat belt. We are running your dinner rotation clean over and replacing it with 3 easy nights that will leave your family wondering what aliens abducted the cook and replaced you with the chef!

I usually make the marinade right in the instant pot since the shoulder is so huge that it will only fit in my 8 QT IP.

Back to business. How long do I marinate this bad boy?

Depending on your schedule, I recommend leaving the pork in the marinade from Sunday morning through Monday. It does take about 1 1/2 hours to pressure cook this beast to a point where you can easily shred the heck outta it. The reason I recommend this exact marinade is that these ingredients lend themselves to the flavors you will add each night of this series.

Pork shoulder isn’t that expensive but if you want a banging deal, I recommend you go to your local Asian or Latin market.  I got the one featured to the right at Fresh World. Not to mention, their produce department is the coolest place on earth! That’s over 9 lbs for 12 bucks! No, my pork didn’t need shades but that gives you an idea of scale.Not shredding easily?Once the pork is done in the instant pot, take it out and sit it on a large cutting board to shred. If you find it isn’t shredding easily, place it back in the instant pot and repeat cooking for 10 – 15 mins.For the entire series and links to each of the 3 nightly recipes, click here.

Whole 30 – Omit the can of soda and make sure that the OJ is compliant.

Mise en place because you know Im not going to let you make even a marinade without getting your supplies out.

Slice up onion and orange into big slices. This step is for flavor so you can cut it into any shape you want.

Score the top of the pork with a sharp knife in a criss cross pattern and stuff slashes with minced garlic.

Depending on the size of your instant pot, you can either lower the shoulder into the pot on top of the onions or you may need to cut the shoulder down into manageable pieces.

In addition to the garlic, zest the orange and pack that ish into the slits of the pork and save some to sprinkle on top as well (after next step). Place orange slices on and around the pork.

Pour soda and orange juice around the pork into the bottom of the instant pot insert. Put bay leaves on top with more of the orange zest. Make sure you take the insert pot out of the unit, seal with cling wrap or tin foil and place in frig for 24-36 hours. Minimum of 12 hours for impact flavor.

Take out of frig a few hours before you are ready to pressure cook the pork. This will allow the pork to be a bit more room temperature and reduce cook time.

You can skip this step if time is an issue but i recommend that you allow enough time. You can ether empty the juice in the insert into a pot (do not discard), set aside and use the instant pot to brown the meat on all sides or use a separate skillet to brown the meat and then return everything back to the pot. In any event, place everything back into the instant pot, place lid on to the lock position, and turn valve to the sealed position. Hit Manual and adjust time to 80 minutes.

Once time has run out, natural release for 15 minutes then release the rest of the pressure, if any. Open the pot carefully and remove the meat to a cutting board. Allow to rest and cool for 10 -15. Got your death claws out?

Shred the meat and separate the meat into 3 separate containers, seal, and place them in frig. IF you are continuing to Step 2: Pork Carnitas Tacos for dinner tonight, then leave one container out. See links above to the rest of this amazing series.
