1.5lb ground turkeyor any other groung meat

1 large diced red onions

1 large diced red bell pepper

1 large diced green bell pepper

1 large diced orange bell pepper

1 large diced yellow bell pepper

2 roasted diced hatch chili pepperseeded

2 roasted diced pablano pepperseeded

2 sliced jalapeno

1 bag diced frozen sweet potatoesor raw

1 bunch chopped cilantrostems too!

4 cans fire-roasted tomatoesor similar but check ingredients

1 small can tomato paste

3 T chili powder
-
1.5 T heaping garlic
-
juice of 2 lime

1 t lemon pepper

1 T mexican oreganoor regular

1 can (optional) coconut cream
Directions
Great for a crowd or a cold, this chili has more flavor and personality than Lady GaGa! It will knock your socks off and prove once and for all that BEANS ARE OPTIONAL!
Now lets get one thing straight – I LOVE CHILI. I am a soup aficionado. All understatements! I think my family was sure I would not make near as much soup after we moved to hot Florida.
And true, I do not make soups AS MUCH. I still make plenty. It has been strangely chilly in Florida so guess what I made? Yup! Whole 30 Chili.
What is the Whole 30 or simply no bean strategy? Add Sweet Potato cubes and a ton of different peppers – both spicy and sweet.
As usual, if you are on Whole30 make sure you ready EVERY ingredient label on your cans of tomatoess, paste, etc. Even watch your combo spices.
Some spice brands viciously add in sugar and soy. Criminal, I know!!
IP Pressure Cooker Version
If you do not have the time to set the instant pot to the slow cooker method, no worries. Follow the steps through Step 4. Once you have everything in the pot, press the Manual button (high pressure) and set the time for 5 minutes. Do a manual release. Remove the lid, hit Saute / Low and add the coconut cream if you are adding this ingredient. Stir the cream in well. Simmer 5-10 minutes and serve.
Chili to thin for your liking?? In a small bowl or cup, add 3 T of tapioca flour or similar thickener with 1 T of water. Stir well and pour into chili. Simmer until the chili begins to thicken. Good? Then, serve.
No instant pot??? No problemo!
This will be your ticket back to happiness in the kitchen and save you more time then you ever thought possible. Not too mention, you have nothing to lose. Amazon has an outstanding return policy. Personally, I would buy as big a pot as you can afford and prepare yourself to put your rice maker, slow cooker, and old fashion pressure cooker on Craigslist! Counter space freedom!!!

Optional but a game changer: Once the chili timer goes off, keep the chili on warm and add a can of coconut milk - full fat or light. Doesnt matter. Stir well. Heat for 10 minutes. Serve with slices of avocado and cassava chips if not on whole30. |
