1/2 head sliced cabbage
1 T peppercorn medley
1 T minced garlic
1 1/2 T tumeric
1 1/2 T minced ginger

Instant Pot: Tackling Fuel Detox Soup – Ready to heal from the inside out?

Once a month, I make a big pot full of this detox soup in my instant pot.

No instant pot???  No problemo! This will be your ticket back to happiness in the kitchen and save you more time then you ever thought possible. Not too mention, you have nothing to lose. Amazon has an outstanding return policy. Personally, I would buy as big a pot as you can afford and prepare yourself to put your rice maker, slow cooker, and old fashion pressure cooker on Craigslist! Counter space freedom!!!

Now, why a detox?

Whatever you poison is or even if you are a model of health and well being, its always good to give your body a reset with some overly healthy ingredients and superfoods that are easy on digestion and your organs. Think of it as a recharge and a vacation for your plumbing.

Here’s the kicker. Eat as much of this soup as you want, can, etc. Its super low in all evil things and pretty filling. It will also help you to lose some water weight. Normally, I eat on it all week for lunchies and sometimes even have it for breakfast and lunch. Keep your dinner light and healthy to ensure the benefits of this soup to not get overshadowed or have it for lunch and dinner until its gone.

This is just my two cents. If you have other medical conditions other than being a dumbass more often than you care to admit, you may want to consult your physician. Its all veggies and seasonings so I’m not sure why it would hurt anyone but I need to cover my ass here. There! Said!

Benefits of Tumeric

This contains tumeric. Tumeric is a super herb. Lets call it Herbie (like the VW – or am i the oldest person reading this blog?) Herbie is a great natural anti-inflammatory and  detox for your liver and kidneys. But it doesn’t stop there.  Its been used in Asian cultures since the dawn of time for everything from digestive disorders to gum disease. Crazy right?!

You may know tumeric as it is a dominant spice in one of my favorite flavors in the world – curry – it gives it that richdetox super food soup warm orange color and deep sultry flavor. Im not going to go into a diatribe about this amazing ish. Check out this article on WebMD to learn more about Tumeric.

The sheer volume of cabbage in this soup is bound to clear things up if you’re picking up what I’m putting down.

Last but not least, I will share another CHEAT and I will tell you why this is one of my favorite CHEATS.

Buy all frozen veggies except for the cabbage and kale. I repeat. Buy all frozen veggies except cabbage and kale.

You got that? Now, here is the advantage besides the enormous time saver or not having to chop your day away.

Frozen veggies in most cases have more nutrients than their fresh counterparts.

There is no freaking way Kym! You’re insane! Yes, I am but that’s not the point.

The point is that frozen veggies are picked at their prime and then frozen for all the nutrients to be suspended in time and space. Fresh veggies may have been picked and treated a week or so ago (who knows) and the longer time after harvesting the nutrients begin to fade along with the freshness.

You can make this soup with all fresh veggies if you want a real time waster and you have no life. I applaud you. But really you are doing yourself a massive disservice.

Recommendation: If you need a little more umphhff, add a cup of lentils to this. Some folks add organic chicken. I think if you are going to detox, leave your carnivorous inner mongoloid at the door and take a break from meat –  you animal murderer! Just kidding. This is the only time I’m an herbivore!

I ate on this for lunch and dinner for 3 days along with lots of water and oatmeal for breakfast. It is actually quite tasty. Remember, most veggies will work in this soup.  However, steer clear of starchy veggies like corn and potatoes. No go!

I think you will enjoy this soup more than other detox soups out there due to the seasonings which yield a robust flavor. Remember, eat as much or as little as you want. No guilt with this one!

To add meat or not to add meat

If you want to keep this pretty healthy but want to add meat, I recommend chicken. Prior to beginning this recipe, I recommend following my recipe for Fauxtisserie Chicken – a whole chicken in the instant pot. Shred the meat and add it to this soup AFTER its done cooking in the pot.

Use the remainder of the chicken for my delish Da Bomb Chicken Salad (soooo damn good). Trust me, this is not yo’mamma’s chicken salad.

Mise en place - get everything out and ready. Dont forget your kitchen scissors for opening all of those frozen bags. Oh thank you gods of time and sanity savings, I love thee!

Add all ingredients and spices to the instant pot. Empty a large container of low sodium chicken or veggie broth in pot over veggie goodness. Stir.

Make sure you do not go over the fill line on the inside of the pot. Reduce the contents if you are over. The pot will not come to pressure if it is too full.

Put the top on the IP and turn the valve to sealed. Hit the manual high setting and adjust the time to 12 minutes. Go for 18 if you want softer veggies.

Once time is up, allow for a natural release for 10 minutes, After, manual release the remaining pressure. Take off top and stir. Take a big honkin soup ladle and scoop up some homemade detox soup.
