Ingredients

2 per person tortillas hard or soft, corn or flour
1/2 large diced onion
juice of 1 lime
1 diced seeds removed jalapeno
1/2 cup water
1/2 to whole packet taco seasoning
garnish meat with salsa fire-roasted or tomatillo

Yup! You heard that right. Meatloaf tacos.

This recipe completely transforms your leftovers into something new and tasty. The reason most leftovers go into the frig to die and get thrown away is because “man we had that last night. i don’t want it again!” (sad face) køb kamagra. Well, this is hands down the best way to enjoy that meatloaf again.

If you used my texmex meatloaf recipe, then you are in even better shape since it has the taco seasonings in it already. If not, then what in the sam hell are you waiting for? Huh?! BTW, I do not have a deep southern accent but I imagined I did for that last tidbit. =P

Ok, I’m calm. I think. If you want to start here then so be it. You will want to add a low sodium taco seasoning packet to the meat with water (like you do for ground beef for tacos). I used my processor to break up the meatloaf so it more resembles ground beef. Even though, the meatloaf has sauteed onions in it, I usually make some fresh ones to give it a bit of added “just cookedness” to really sneak it by the crowd. A fresh jalapeno chopped finely and thrown in with the onions is simply divine.

You dont want to miss out the best topping for any SexiMexi dish – Cilantro Lime Crema.

To make this night even easier on your time and sanity, I recommend the following sides or as I affectionately refer to them – CHEATS!

Sides:

Box of Goya instant spanish rice or bag of Knor spanish rice. Family size or buy 2 bags if you have a larger crew than I do. Follow instructions but should not take longer than 11 minutes.

2 cans of fat free refried beans heated up in Chef Mic with a few splashes of hot sauce and some shredded cheese mixed in. Heat for 1 min, stir, heat for another min, stir. Is it hot enough? Yes. Serve.

Mise en place peeps!

Take your room temperature leftovers and throw them into your food processor. Pulse a few times to loosen up the mixture.

Add diced onions and jalapeno to skillet and saute with about a T of olive oil on med. high heat. Pour in meet from processor. Continue to break up the meat loaf into smaller bits with a fork or wooden spoon.

Once its heated through, add the water and any extra seasoning you may think it needs to wake it up. Taste! Taste! Taste! If you not using my meatloaf recipe for these leftovers, this is where you will want to add the water and a packet of taco seasoning. If you are, and want to spice it up a bit then add more taco seasoning. OR just paprika, oregano, and a sprinkle of cayenne pepper. That'll wake it up AND YOUR FAMILY!

Work on your sides while your leftovers and rebranding themselves in the skillet. Cant multitask? Turn the meat down to very low and cover.

Now get to your sides yah big DIVA!

Assemble your tacos the way your normally do. This just takes the place of the hamburger or chicken normally serve.

Note: Put some tomatillo or fire-roasted salsa on the meat to further moist it back up into shape. Then disguise it in cheese, tomatoes,lettuce or whatever your minions like on their tacos.

Squeeze a few squirts of cilantro lime crema (link to my recipe above).

If you are making quesadillas to go with your hard taco - Heat the tortillas up in Chef Mic or you can grill them in a pan on med.high heat for about 1 min each side. Assemble with meat filling and cheese. Top with the crema. The crema is such a hit at my house, I have to ask my son if he would like some taco with his crema. His answer - just a little momma. Whatta kid! Crazy and insane just like his momma!
