Pumpkin Spice Apple & Sweet Potato Breakfast Bake

Ingredients

Adjust Servings:
1 large diced or 2 medium diced sweet potatoes
2 large diced honey crisp apples or other very sweet apple
2 T olive oil or ghee
2 T pumpkin pie spice
2t separated cinnamon
1t himalayan sea salt
1/4 cup optional date paste see note in content; optional
1 large diced banana
1t topping of maple syrup optional; not Whole 30
3/4 cup optional raisins optional
3/4 rough chopped walnuts optional

    It is by far the sweet potatoes that set this dish apart and leave your breakfast guests saying “Wait? You put what in this??”.

    Everyone loves the combination of sweet and savory. It is sinfully satisfying to the pallet as well as the soul.

    This was inspired my son’s request to NOT have the same ole breakfast, Mom! This is often difficult as I was on Whole 30 during this time. He also had a friend over so I knew I was going to have to be creative so my son wouldn’t get labeled the “nothing good” house.

    If you are not on Whole30, I recommend drizzling this sucker with some pure maple syrup after plating. But honestly, it is tasty and sweet without it. Especially with this next tip / trick:

    Optional Note from Ingredients List: Date Paste

    I also add a touch of additional sweetness by making my own Whole 30 compliant date paste. I soak 10-15 dates in warm water for 15-20 minutes. Then, I add them to my small food processor until I get a paste consistency. Right before I pour the sauteed mixture into a casserole dish, I take a small amount and place it in drops around the mixture and then stir the mixture before placing it in the oven to bake.

    Mise en place

    Read through the notes and recipe first. Then, collect everything you will need to make this breakfast treat. Next, preheat oven to 365F and dice up apples and sweet potatoes. If need be, rough chop the walnuts into smaller chunks.

    Once your skillet is preheated over medium high heat, add olive oil. Once oil is hot, add diced ingredients to the pan. Stir to coat. Add spices, leaving 1 t of cinnamon for topping. Stir occasionally. Add more oil if need be to prevent sticking. Once apples and potatoes are beginning to soften, add the walnuts, raisins and date paste. See notes for date paste. Stir to incorporate.

    Pour mixture into a greased casserole dish and bake for 22 - 25 minutes. Once done, let cool for at least 10 minutes before serving.

    Top with diced bananas, sprinkle with cinnamon, and add a drizzle of maple syrup (if not Whole30). Enjoy lovebugs!
