Ingredients

Adjust Servings:
1/2 large shredded rotisserie chicken
2 cups diced rainier cherries
1 cup plain greek yogurt sub 2 TBs of compliant mayo
1 cup chopped purple cabbage
1/2 large diced red onions
1/2 cup diced green onion
1.5 T horseradish mustard
1/2 cup optional sesame seeds
1/2 cup gold raisins optional, sub regular raisins
1/2 cup shopped, optional spinach
1 t lemon pepper
1 t garlic powder
1 t himalayan sea salt

    Rainier Cherry Chicken Salad was just begging to be made as I cased the sale table at my local Sprouts. Great deal on these beautiful “new to me” cherries. So I grabbed them all while thinking about the rest of those pesky rotisserie chicken leftovers.

    SPECIAL NOTE: Substitute any cherry variety or blueberries for the rainier cherries if you cannot find them!

    Alternatives & Options

    Greek Yogurt Alternative

    For Paleo and Whole30, use 2 TBs of Whole30 Mayo or omit and add 1 more TB of the mustard and mix to incorporate.

    Options – this ingredient list is optional. I like a lot of flavors and different textures in my chicken salad – along with something slightly sweet – enter cherries idea!

    But don’t worry, I ain’t mad because you want to use already made chicken from your grocery store. But remember, 99% of those rotisserie chickens are NOT whole30 or paleo due to the 1 billion ingredients they inject or smother on the skin – sugar, corn products, etc. – Even the all natural chickens have cane sugar – BELIEVE IT OR READ THE DANG INGREDIENTS! =)

    Shred the cooked chicken and get all of your veggies and cherries chopped or diced. Combine all ingredients except for the seasonings and mix gently, enough to lightly coat. Add all seasonings and lightly mix again. Chill in the fridge until you are ready to serve.

    Top with green onions and parsley, if using. Serve on toast, in a bowl of arugula. Easy, stunning, and what the season is calling for!
