Kickass Carnitas Soup w/ Chayote Squash

Ingredients

Adjust Servings:
6-8 cups carnitas/shredded pork to taste
1 Lg container bone broth
2 cups water
2 diced into cubes chayote squash
1 medium diced red onions
5 diced or sliced mixed sweet peppers bag of mini sweet peppers
2 large diced potatoes sub red or gold potatoes
1 bunch chopped cilantro
1 small container arugala for topping as pictured
1 sliced (optional) jalapeno
1 t cumin
1 t garlic powder
1 t smoked paprika
zest & juice of 1 lime
1 t (optional heat) chipotle seasoning

    NO SOUP FOR YOU! Just kidding. This Instant Pot (IP) Carnitas Soup is a true busy work night warrior! I kid you not. Throw it all in the IP, set the timer, get other stuff done, help the kids with their homework and before you know it – a little topping here, a little chips there – and BAM dinner is served. Carnitas Soup is hearty, robust, and the flavors of the smoked paprika and chipotle really make my all things Latin-loving heart sing!

    If you are starting from scratch and still need to make the carnitas (pulled pork), never fear! Use the following recipe for easy and delish carnitas:

    I know what some of you are thinking and YES, you can prepare this stovetop or in your slow cooker OR stovetop.

    Slow Cooker / Crockpot

    Follow the steps and place all ingredients into your crockpot, place the lid on, and set to High for 4 hours or Low for 7-8 hours. This is ideal for set it and forget it while you work.

    Stovetop

    Place all ingredients in a large pot or dutch oven, cover, and set to medium-high heat. Once it comes to a boil, turn the burner down to medium-low and let it simmer covered for 25-30 minutes. You want to cover it so the liquid doesn’t evaporate too much.

    Veggie Substitutions – Can’t find Chayote? No worries!

    If you cannot find chayote squash, you can sub cubed zucchini or summer squash. Even cubed sweet potatoes would be a nice sub but that will be one heck of a bowl o’potatoes – is that bad? No, it’s just up to you boo!  I think chayote squash reminds of an apple – but less sweet. Try it if you can find it. My local Walmart sells them, believe it or not.

    You can sub any potatoes you prefer. I recommend leaving the skin on since this is where most of the vitamins live. But it’s not a deal breaker.

    Add this to your Sunday meal prep. Once cooled down, place in individual plastic containers.

    When Fall arrives or when you need something a little bit more warm and comforting for a cold winter night or just a lousy day, make a batch of this leftover carnitas soup and slip into your comfy cozies. It eats even better on the couch in front of a fire (fake or real) and your favorite movie.

    No instant pot for your pork carnitas???  No problemo!

Personally, I would buy as big a pot as you can afford and prepare yourself to put your rice maker, slow cooker, and old fashion pressure cooker on Craigslist or Facebook Marketplace!     Chop up all vegetables and cilantro. Dice up the stems of the cilantro very small. Chop the cilantro leaving a few of the full leaves for garnish if desired.

    Pour carton of broth and water in IP. Add all of the remaining ingredients except for jalapeno, arugula, and cilantro for garnish. Place the lid on the IP and seal the valve. Hit the manual button and set the timer to 3 minutes. With this amount of liquid, it will take about 15-20 minutes to come to pressure and then it will begin to count down.

    Once the timer goes off the IP, allow for a 5 minute natural pressure release. Take the lid off, hit Saute button and set it to medium pressure. Allow the soup to simmer for 10-15 minutes, stirring occasionally, uncovered until you are ready to serve.

    Serve with arugula placed around one side of bowl. Top with a leaf of cilantro, a few slices of jalapeno, squeeze of lime and paleo tortillas chips of choice (all of which are optional). Not optional is total enjoyment and good company while eating this delish soup.

    Leftovers freeze well. Just allow to completely cool before placing in the freezer. Leftover keep in the fridge for up to 5 days.
